With the Ankarsrum mixer and attached pasta roller you can make your own lasagna, ravioli or tortellini. The roller accepts a dough strip 5-1/2″ wide, and rolls a 5-1/2″ wide noodle in successive passes. Output thickness is adjustable with six settings of the end-mounted knob, from 1.6 mm down through 0.15 mm thick (paper-thin).
To achieve the desired thickness, start with a pass at the widest gap setting, then turn the knob to thinner settings for successive passes. It’s the same approach used with a rolling pin—but faster, easier, and with perfect thickness control.
The included Fettuccine cutter accepts pasta strips 5-3/4″ wide, and cuts it into 1/4″ wide noodles. The depth is fixed. We also offer Ankarsrum’s accessory Lasagnette cutterand the Spaghetti cutter, each available separately.
